Hands down takoyaki.
Takoyaki is Japanese octopus dumplings — tako means octopus, yaki means grilled. It's bits of octopus cooked in an unsweetened batter poured into hot ball molds and then covered in katsuobushi (dried fish flakes) and aonori (seaweed) and a slightly sweet thickish sauce.
Those folks pour, flip and turn out those balls like no one's business! As a street food, it's served messily in small paper trays with a toothpick. Heaven on Earth!
